My favorite Mexican Rice Cauliflower Rice

1/2 cup Diced Onion
1 Jalapeno (leave seeds if you want it hotter)
saute in oil till soft
Add
1/2 can of Diced Tomatoes
1 Tbsp Tomato Paste
2 cloves G
arlic
1 Tbsp Cumin Powder
1/2 Tbsp Red Chili Powder
Salt
Pepper
Simmer for a minute
Add: 1 bag (4 cups) Frozen Riced Cauliflower
Cook until liquid has cooked down and cauliflower is starting to fry in the pan.
Serve with Cilantro, Cheese, Avocados whatever you have handy.
